Time for a Trip to Texas and Football

Jacob and Mathew are both playing football this fall.  With Mat's games being and Saturday and Jake's on Monday, it made it very easy to spend the week-end with the Woods' Family so we could see both games.  Also, an added plus was the fact the kids were out of school Monday for Columbus Day!

Early Saturday morning Mel and I headed out to Texas since Mat's game began at 12:00.  We just met the Woods' Family at the field.

The weather turned off cold and damp; however, that did not dampen our spirits for the game!

After the game we ate Mexican food.  It was delicious!


In November we have 2 birthday girls - Melodi and McKaylea.
They are opening their gifts early.



The next morning we had a "country breakfast" of sausage, gravy, biscuits and farm fresh eggs.

Later in the morning Grandpop joins Jake and Mat outside for a football practice.

Melodi, Emma and I are making an Apple and Cream Cheese Bundt Cake with Caramel Pecan Frosting.  Amberlea had found this recipe on Pinterest and had shared it with Melodi and me.

It turned out great!

Of course we had to sample -  we had a big breakfast, then we made a large pot of tortilla soup for lunch.  The cake was ready around lunch time so we decided to have dessert first!  Who says there is a certain order in our eating patterns???

The recipe for Apple and Cream Cheese Bundt Cake with Caramel Pecan Frosting:
Cream Cheese Filling:         
1 (8 oz.) pkg. cream cheese, softened                                             1 large egg
1/4 c. butter, softened                                                                      2 Tablespoons flour
1/2 c. sugar                                                                                      1 teaspoon vanilla
Apple Cake Batter:
1 c. chopped pecans                                                                        1 tsp. baking soda
3 c. flour                                                                                          1 tsp. nutmeg
1 c. sugar                                                                                         1/2 tsp. allspice  
1 c. brown sugar                                                                              3 large eggs
2 tsp. cinnamon                                                                                3/4 c. canola oil
1 tsp. salt                                                                                          3/4 c. applesauce
1 tsp. vanilla                                                                                     3 c. finely chopped apples
Caramel Pecan Frosting:
1/2 c. brown sugar                                                                           1 tsp. vanilla
1/4 c. butter                                                                                      1 c. powdered sugar
3 T. milk                                                                                          1 c. pecan halves
Filling:
Beat first 3 ingredients with mixer until blended.  Add egg, flour and vanilla; beat until just blended.
Batter:
Preheat oven to 350 degrees.  Mix flour and next 7 ingredients in large bowl; stir in eggs and next 3 ingredients, stirring until just moistened.  Stir in apples and pecans.  Spoon 2/3 of apple mixture into greased bundt pan.  Spoon filling through apple mixture using a paring knife.  Spoon remaining mixture over Cream Cheese Filling.
Bake for 1 hour and 15 minutes. or until done.
Frosting:
Bring brown sugar, butter and milk to a boil in saucepan, whisking constantly; boil 1 minute.  Remove from heat; stir in vanilla.  Whisk in powdered sugar until smooth 3 - 5 minutes or until mixture begins to thicken slightly.  Pour immediately over cooled cake.  Garnish with pecans.  (Recipe from Jenny Bakes).  By evening all the cake was devoured.  I suppose that tells you how delicious it was!!!


 The next morning we had Kolaches ( regular and jalapeno).  They were very tasty!!

The kids and adults played outside before we headed to Jake's game.



While taking Jacob to school to meet the bus, we had to yield to this flock of ducks crossing the road.  It was so cute - they stopped traffic both ways!

 Copperas Cove football teams are known as the Bulldawgs.
The younger teams go by Bullpups.

The rest of us drove to Belton, Texas where Jacob's game was to be.
This is the County Court House - quite unique in its architectural design.

Bryan had checked online about a place to get some burgers in Belton.  Crow's Hamburger Stand was highly rated so we decided to try it.  What a great choice!

Crow's has no inside seating - only picnic tables at the back.  The weather could not have been better for eating at the picnic table.

Britt Drug Company has an old-fashioned ice cream parlor in the back of the store.  
They have unique items in addition to the soda fountain and fudge candy.

While enjoying their ice cream, Mat and Grandpop had a "hot and heavy" game of checkers.

This is the chocolate malt that Melodi and I each ordered.  Not only is the glass full, the metal container beside the glass is half-full.  If she and I had known that we would have shared one instead of each of us ordering one.

What a wonderful and fun time we had with Bryan, Melodi and the kids!  Seeing good football games, experiencing new eating places, exploring Belton, and just spending time together makes for many precious memories.
We have 2 football players of whom we are very proud!
