Garden Vegetables

Potatoes, onions, squash, green beans, beets, cabbage and snow peas are the garden vegetables being enjoyed by the Bradford Family. 
A few green tomatoes are on the vines.  Hopefully we will enjoy a bounty of tomatoes and peppers soon in spite of this heat and dry weather.
There are few things better than eating fresh garden vegetables.

 Green beans ready for ends to come off and be snapped
 Beets that have been pickled
Several family members really like pickled beets.  My recipe is as follows:
Pickled Beets
Beets
2 cups vinegar
2 cups water
2 cups sugar
2 teaspoons salt
Cook beets in water to cover until tender; drain and cover with cold water.  Peel beets and cut into quarters.  Combine vinegar, water, sugar, and salt in saucepan.  Bring to a boil.  Add beets.  Simmer for 30 minutes.  Ladle beets and liquid into hot sterilized jars; seal with 2-piece lids.

Hope of having fresh tomatoes soon - I do believe they are the ultimate in fresh veggies!
